Brie, Prosciutto, and Cherry Sandwiches

We had sandwiches for dinner.  Funny how a sandwich for lunch seems awesome, but having a sandwich for dinner sounds like we’re not trying.  What did the poor sandwich do to deserve this double standard? 

If I called it a crostini, then we would be impressed.

Brownie / Oreo / Chocolate Chip Cookie Cupcakes {For the SPCA National Cupcake Day!}


It’s National Cupcake Day in support of the SPCA and Humane Society!  And really, any excuse to make cupcakes it a good one.  But when you think of all the poor abandoned and abused animals out there that need our help, doesn’t that make it even more worth it to participate



For this cupcake recipe I wanted to do something really over the top.  The inspiration came from “slutty” brownies that have been making the internet rounds.  This brownie has been around my friends!  It has had an affair with Oreo AND chocolate chip cookies.  Essentially an Oreo brownie with a chocolate chip cookie base.

Kale, Dragon Fruit, and Coconut Smoothie



I am training for a 10k race in May.  The race is in May, not the training.  The training is now.  Or at least it was until I got reinjured.  


Injuries are the worst.  I had the best intentions of sticking to my training schedule and now I can’t!  But of course I still feel guilty.  As if I was faking the injury just to get out of training.  It’s all so silly.  Runner’s guilt, who has felt this before?

My Week in Meals


This week has been crazy!  I’ve been at work more than I’ve been at home, and I haven’t stepped foot in the kitchen in days. 

Last weekend was a long weekend, and knowing that I was about to embark on this week of craziness I relaxed to the max.  I made the best coconut soup ever and discovered that galangal juice stings if it gets you in the eye.  I shared some blackberry and white chocolate pavlova with you.

Kettle Corn

Thirteen hour work day behind me and I am exhausted!  Just totally pooped.  And there are still two more days of this to go... I need a snack, I need a pick-me-up, I need something with a little POP!  And I need it to be fast...


Ah kettle corn... that sweet and salty taste with the thin crunchy coating of sugar on each kernel.  I never would have believed that it is so easy to make your own.  And BONUS: you feel awesome cause you made it yourself.  You totally get bragging rights.  You totally shouldn’t feel bad for demolishing the whole bowl.  You can always make another to share...

Blackberry White Chocolate Pavlova


I am done with winter.   Totally over it.  I am dreaming of leaving the house without having to put on a coat and a scarf and a hat and mittens.  I am dreaming of patios and tank tops and sandals.  I am dreaming of juicy summer fruit and airy whipped cream.

Brown Butter Shortbread



I have come to the conclusion that people are inherently lazy.  Unless it is absolutely necessary to do something, people won't do it.  Especially if there's a chance that someone else might do it instead. Let's not let that be us. Let's be better than everyone else and not settle for the bare minimum.  Let's brown some butter!  And let's make some cookies so that we can eat them with some hot tea and forget about our problems with people.  


Browning butter is one of my favorite things.  It turns regular butter (which we know I still love) into a nutty, rich deliciousness.  Put it on pasta, spread it on bread, eat it with a spoon.  In this case, I put it into Scottish shortbread. You should too!

V-day Love


It's almost Valentine's day again!  To be honest, hubby and I haven't really gone all out for Valentine's day in a long time.  This is not because we don't love each other, but rather because we show our love everyday through the little things.  Sooo cheesy, I know, but true.

Malted Dark Chocolate Mocha

So this was my walk home yesterday...


It started snowing Thursday night and it didn't stop until late Friday.  Going to work was a journey and an adventure. Snow flying in your face, toes getting wet through shoes, and so much slipping and sliding.  And although the worst of it is over for us, the Eastern US is getting pummeled as we speak.
