Hibiscus Panna Cotta With Raspberry Sauce

I’ve lived in Canada most of my life so I really don’t expect it to actually be spring even when the calendar says it is.  But we’ve had hints here and there; just enough to whet your appetite.  The days are longer so we don’t have to walk home in the dark anymore.  The bright sunshine makes you think it’s warmer than it is.  I even saw some buds on the trees the other day.

Candied Maple Bacon

When Lisa goes vegetarian in The Simpsons, her dad keeps asking her what she won’t eat.

“What about bacon?”
“Pork chops?”
“Dad, those all come from the same animal!”
“Haha, right Lisa, a wonderful, magical animal…”

It really is a wonderful magical animal, but what is even more wonderful and magical is how we can transform pork belly into bacon.  Actually there’s nothing magical about it, it’s just science!
