Sparkling Rose Cocktail

Sparkling wine cocktails are some of my favourites right now.  Anything topped with a little bubbles is delicious. I’ve done lemon sorbet, white cranberry juice, elderflower liqueur

This time, it’s rose water.  Roses are good for more than Valentine’s bouquets, you know.

This cocktail is so simple, there’s no excuse not to make it for your sweetheart in one week.  In fact, you should probably make it this weekend too.  Just for practice.

A rose by any other name, would still make a great cocktail.

Sparkling Rose Cocktail

1/2 cup sugar
1/2 cup water
1-2 tsp rose water
Sparkling wine
Rose petals for garnish (optional)

In a small saucepan combine sugar and water and heat until dissolved.  Let cool.  Stir in rose water to taste.

To make the cocktail, pour a splash of syrup into a flute or coupe and top with sparkling wine.  Float a rose petal on top, if desired.
