Snack Attack: Peaches Jubilee



Do you have some peaches and 5 minutes? You can make this amazing dessert! 



I’ve been writing a lot lately, trying to graduate. But even if all you had for dinner was leftover scalloped potatoes while hunched over your laptop, sometimes you just need dessert. 



This is the perfect “I’m too busy to make dessert but man I want something good” dessert. I splashed in some Koloa rum that we brought from Hawaii at the end. It gives such an amazing vanilla flavour and adds a little more punch! If you don’t have this or any other rum, feel free to use vanilla extract. 



So get to it!


Peaches Jubilee

2 large, ripe peaches
4 tbsp brown sugar
Pinch of salt
1 tbsp Koloa or other dark rum OR 1 tsp vanilla extract

Ice cream


In a non-stick frying pan, cook peaches, brown sugar, and salt over medium heat until sugar is melted and coats peaches in a thick syrup. Add rum and cook until almost completely evaporated.

Serve warm with ice cream.
