Avocado, Radish, and Sweet Pea Salad

I like salads without lettuce.  Lettuce is just filler that you have to pick around to get to the good stuff.  Chewing through a pile of leaves doesn’t make me excited.  But then I realized that I can control my own salad fate.  Lettuce forget about lettuce (haha).  


This salad was inspired by two courses from the new Menu Potager (veg tasting menu) at the Auberge du Pommier, where I took Alex for his birthday dinner this past weekend.  One had sweet peas that I fell in love with all over again.  The other paired avocado with thinly sliced radishes.  I smashed these two courses together and drizzled it with lime juice and olive oil. 

What better way to welcome May than a fresh spring salad.  Easy peas-y (sorry/not sorry).  



Avocado, radish, and sweet pea salad

For two servings:
One ripe avocado, cut into bite size chunks
4 radishes, thinly sliced
A handful of sweet peas
1 tbsp freshly squeezed lime juice
3 tbsp olive oil
Salt and pepper to taste

Combine avocado, radish slices, and sweet peas in a bowl.  Whisk together lime juice, olive oil, salt, and pepper.  Drizzle some over the salad right before eating.  Enjoy!
