This is about as no-fail as it gets! I whipped up two batches for a friend's birthday. One with a tsp of peppermint extract and some red gel coloring to make the marshmallows all pretty pink. The other batch was with a tsp of vanilla bean powder. (I didn't have extract on hand).

Delicious! I also added some maple extract and pecans and it came out like a cross between marshmallows and nougat. But you are totally making me give away a future post.. ;)SmartCookiehttps://www.blogger.com/profile/15732656423932248391noreply@blogger.comtag:blogger.com,1999:blog-6906386887161556915.post-49527294622259334892013-03-10T08:34:21.737-04:002013-03-10T08:34:21.737-04:00How about maple syrup instead of corn syrup? How about maple syrup instead of corn syrup?Anonymoushttps://www.blogger.com/profile/04844893217773855695noreply@blogger.comtag:blogger.com,1999:blog-6906386887161556915.post-62534320662656467132013-03-09T12:49:39.428-05:002013-03-09T12:49:39.428-05:00Kel, I know the vegan/gluten-free conundrum very w...Kel, I know the vegan/gluten-free conundrum very well. It's hard to replace the crazy things eggs, gelatine, and gluten do. Though agar-agar makes a jelly-like product it does not bind with the sugar as beautifully nor is it as stable so you have to add other things as well. Mostly protein and stabilizers. Since I haven't done this myself, I refer you to this article from Serious Eats (Scroll to the "Vegan Conundrum" section). Good luck and let me know if you try it!

http://www.seriouseats.com/2010/12/how-to-make-marshmallows.htmlSmartCookiehttps://www.blogger.com/profile/15732656423932248391noreply@blogger.comtag:blogger.com,1999:blog-6906386887161556915.post-46603595220031222072013-03-09T12:39:49.873-05:002013-03-09T12:39:49.873-05:00Could I do this recipe with agar agar??
